Region:  Soconusco

Elevation: 1200 - 1700 masl

Varietal: Marsellesa, Hybrids, Starmaya

Process: Natural

Tasting Notes: Macerated Cherry, Berries, Boozy, Dark Chocolate

This coffee represents how you feel when you bump into someone that you kind of know but not really. It's familiar but also slightly out of your comfort zone. It tastes like cherry, but not the fruit, it is macerated*. It's boozy, but not winey, maybe more like whiskey.

This coffee is also interesting because its taste profile changes as it ages:

3 - 7 Days After Roast, maximum booziness, hint of acidity, dark chocolate finish.

7 - 14 Days After Roast, boozy notes are turned down a notch, mellow and rounded acidity, clean and sweet.

Suitable for all brewing methods!

#challengeaccepted? This coffee is a little bit harder to work with, so be patient with the calibration and reach out to us if you need any help! 😎

*Just a fancy way of saying cherries soaked in alcohol
