Background
Alright, here's a funky one from Ethiopia, one which we know many of you will love. This coffee has gone through the mossto process, and the resulting cup is one that's complex and high in sweetness.
The coffee was grown by smallholder farmers living around the microregions of Tobutu, Gomoro, and Suke in Oromia, Guji. The Urabeast location was founded in 2017, taking the name from ‘Uraga’ the area where the coffee is from, and ‘beast’ to reflect the energy and resilience of coffee. Most contributing farmers own less than a hectare of land, and they grow coffee simply as a backyard cash crop. Coffee will usually be interspersed with other subsistence crops, such as false bananas and other vegetables.
This lot underwent the Mossto Fermentation process which began after the ripe cherries were carefully harvested and delivered to the mill. Once at the mill, the cherries are sorted and then placed in tanks to undergo fermentation. After this initial fermentation, a second fermentation is initiated, adding in the liquid/juice from the coffee cherries, also known as Mossto, to enhance the development of the sugars in the coffee. After this second fermentation is complete, the cherries are dispersed on raised beds to dry in the open sun. Moisture levels are constantly checked to ensure an even drying of the coffee. Once the desired moisture content is reached, the coffee is collected and sent to the dry mill via truck.
On the first sip, you will get notes of dark grapes and the booziness of sweet bourbon, followed by the sweetness of fresh lychee and a strawberry compote finish. With it's candied sweetness, we are sure you'll enjoy it, whether ur a beast or not!
