Timely Dispatch and Arrival

Background
We love a good everyday drinking coffee here at Flip and this one from Guatemala surely didn’t disappoint. Introducing El Aguacate, we could sip away at this one every day and be contented.
El Aguacate owned by Arlam Aguirre. He and his wife Yoesmi Martinez are members of a very special Co-operative of smallholders who are working collectively to farm more ecologically, improve coffee quality across the board and access direct final buyers. This lot is a combination of two flavour-prized cultivars, Bourbon and Caturra. Arlam picks cherries at peak ripeness and then floats them to remove defects. He de-pulps and begins fermentation for two and a half days, washing off some of the mucilage after 36 hours. He then adds fresh water to the tank and washes fully after another two and a half days. After fermentation and washing, this lot was then dried on his patio for 5–6 days, before preparing to export.
Poached pears, right off the first sip. Very fresh and enjoyable. This then leads to the familiar round complexity that we liken to toasted walnut. She finishes clean, with a lingering sweetness of demerara.
